Proprietor/Winemaker Susan A. Mahler Expands Portfolio of Paso Robles Rhone Blends and Single Varietals

Paso Robles, CA. April 3, 2019 — Cypher Winery and Tasting Lounge in Paso Robles owned by winemaker Susan Mahler, announced the release of her 2017 Ethereal white Rhône blend, 2017 Evanescence Rose’, 2016 Theory Three, 2016 Fifth Element, 2016 Phoenix, 2016 Loco, 2016 TNT, 2016 Grenache, 2016 Syrah, 2016 Mourvedre, 2016 and after 15 years of barrel aging her 2003 Dirt Candy port style dessert wine. The addition of these wines compliments an existing Cypher portfolio of Rhône style wines sourced from premium Paso Robles AVA vineyards. 

2017 Ethereal
Paso Robles Blend
50% Clairette Blanche, 30% Roussane, 11% Marsanne

Ethereal has gorgeous aromatics of stone fruit and minerality, followed by nectarine, apricot, honey, chamomile with a rich mouthfeel from aging in neutral oak barrels and a lingering mineral finish.

2017 Evanescence Rose
El Pomar District, Paso Robles Blend
67% Mourvedre, 33% Syrah

This is a bold, deep colored rose’ with big, bright strawberry aromatics, followed by cherry, plum, peach, white pepper, rose petals and dried herbs trailing into a crisp, minerally finish.

2016 Theory 3

50% Grenache, 30% Syrah, 20% Mourvedre

A Grenache leading GSM from Kiler Canyon Vineyard in the Westside hills of Paso which delivers an elegant, classic Rhone style blend, with notes of raspberry, blackberry, and Provencal herbs. This is a gorgeous blend that lingers on the palate.

2016 Fifth Element

40% Mourvedre, 30% Syrah, 20% Grenache, 8% Petite Sirah, 2% Tannat

A Mourvedre leading Rhone blend with huge fruit, structure and spice. The nose has aromatics of blackberry, dark cherry, anise, leather, black pepper, followed by blueberry, tobacco and spice with a long cocoa vanilla finish. A perfect example of why we love cracking the code to exceptional wines with blends.

2016 Phoenix
42% Syrah, 38% Petite Sirah and 20% Mourvedre

Rising from the ashes with an elegance that mirrors the evolution of Cypher and our move to the new Depot Tasting Lounge in downtown Paso Robles. Phoenix has always been a Syrah with a splash of Petite Sirah. The 2016 is even bigger with 42% Syrah, 38% Petite Sirah and 20% Mourvedre. She is simultaneously elegant and bold.

2016 Grenache

Black cherry, dried strawberry, with provencal herb, fig, anise, pepper and spice trail into a long finish oak and vanilla.

2016 Syrah

Big fruit with boysenberry, plum, cherry with hints of leather, caramel and black pepper trailing to a creamy subtle oak finish.

2016 Mouvedre

From the acclaimed Westside Kiler Canyon Vineyard, a varietal not often seen on its own, but worthy of recognition. I love the dark blackberry fruit, black pepper, and anise, tobacco, and a splash of Petite Sirah brings big blueberry and dark fruit to the mid-palate.

2016 Loco

65% Tempranillo, 35% Grenache

Big cherry and raspberry layered on dark blackberry and boysenberry with currants, pepper and spice, oak trailing to a dark chocolate finish with cedar, oak and velvet tannins.

2016 TNT

75% Tannat, 25% Tempranillo

Intense nose packed with dark cherry, raspberry and pomegranate. Notes of caramel and espresso that trail into a mocha oak finish.

2003 Dirt Candy
Late Harvest Zinfandel, Port Style Wine

Barrel aged for 15 years and bottle aged for a year prior to release, this Dirt Candy is smooth! Late harvest of Zinfandel brings deep raison, currant, prune flavors trailing into caramel, cherry and raspberry.

“Excellent wines take a combination of art, science, planning and reacting. Every wine in every vintage presents new challenges,” Susan said. “As a scientist, I value the idea of simple elegance, the notion of solving a problem with the fewest most effective steps. In winemaking, this begins by starting with excellent fruit and taking meticulous care of the fermentations and barrels so that the varietals and microclimate are the primary expression of Cypher wines. Yeast and barrel selection, picking and fermentation strategy, aging and blending are all part of the equation in cracking the code to excellent wines.”
