Scientific Publication to Confirm Predictability of Vicard Generation 7 Flavor Profiles

Vicard G7NAPA, JULY 7, 2015-/ Dr. Marie-Laure Murat and Dr. James Kennedy will release a joint scientific publication confirming the consistency of achievable flavor profiles with Vicard Generation 7’s patented coopering system at the International Symposium of Enology in Bordeaux in July.

Dr. Murat, a leading enological research consultant based in Bordeaux, partnered with Dr. Kennedy of Fresno State University in this groundbreaking research which quantifies the relationship between oak wood tannin potential and the patented molecular cooking process of Vicard Generation 7.   The research, conducted on wines from France, Italy and the United States, shows consistent and reproducible profiles based on 2 unique factors: selection of the raw material by tannin level rather than grain and the use of a computer controlled, radiant heat toasting cabinet.   “My goal has always been to eliminate the variables in the coopering process.  It took many years and a significant investment to get here, but this study shows it’s indeed possible to make barrels with predictable profiles and no variation” said Jean-Charles Vicard, owner of Groupe Vicard in Cognac, France.

“The results of the study confirms what clients from all over the world have been tasting for 6 years, regardless of what varietal it is or where it was grown.  Because each tannin and toast combination has predictable flavors and impact, it’s just a matter of meeting with winemaker and finding out what they want to achieve” said Christy Thomas, Business Development Manager of Vicard Generation 7.    “The hard part is waiting a year to taste the results!”

About Dr. Marie-Laure Murat:

Dr. Marie-Laure Murat, joined Denis Dubourdieu’s research team at University of Bordeaux for her Ph.D. which focused on Sauvignon Blanc and Rosé aromas.  Post doctorate, she joined the Laffort Group and assisted in establishing the renowned SARCO laboratory, specializing in wine analysis as well as research services.  With twenty years of experience in the wine industry, Dr. Murat founded Œnologie By MLM, a consulting and research services firm based in Bordeaux.

About Dr. James Kennedy :

Dr. Kennedy is a professor and chair of the Department of Viticulture and Enology, and director for the Viticulture and Enology Research Center at California State University, Fresno.  Dr. Kennedy has published extensively as an author or co-author in peer-reviewed journals, grape and wine industry publications and proceedings. Prior to his position at Fresno State, Dr. Kennedy held positions at Oregon State University, the Australian Wine Research Institute and as a Fulbright Scholar at the University of Bordeaux.
