Terranea Wine Director Alicia Ajolo collaborates with the premier French Champagne house to develop a limited-edition wine
(Rancho Palos Verdes, CA; November 14, 2018)—Terranea Resort, A Destination Hotel, has partnered with prestigious Piper-Heidsieck to develop a limited edition Cuvée Reserve Champagne, Essentiel by Terranea. Debuting this month, only 2,500 bottles were crafted exclusively for Terranea, making the award-winning coastal resort only the second hotel property in North America (and only the fourth in the world) to offer a private Piper-Heidsieck wine.
Terranea Wine Director and Certified Sommelier, Alicia Ajolo, traveled to France to collaborate with Piper-Heidsieck’s oenological team, where they taste tested variations of ‘dosage’—or sugar levels—then blended with assorted reserve vintage wines to create the one-of-a-kind wine that balances flavor and mouthfeel. The end result features notes of citrus and white fruits, grapes, fresh apple, and fresh almond.
“Essentiel was crafted with our immensely talented culinary team at the heart of it,” says Terranea Wine Director, Alicia Ajolo. “I sought out balance and freshness with just a touch of reserve vintage wine to enhance the complexity of the flavor profile. It allows for our guests to pair with a wide range of cuisine.”
Essentiel by Terranea will be sold exclusively through Terranea’s on-property dining destinations, including mar’sel, catalina kitchen, bashi, Nelson’s, Lobby Bar and Lounge, sea beans, Solviva, as well as in-room dining.
