Petaluma, Calif.—Scott Laboratories, the premier supplier of goods to the wine industry, is excited to announce the growth of its Enology department with new appointment to the role of General Manager. “The Enology department is the heart of what we do here,” comments Zack Scott, CEO of Scott Laboratories.
Jessica Just joined the team as General Manager of the Enology department in April, her third stint working for Scott Laboratories. Her professional experience has been primarily in the wine industry, though her interest in the science of fermentation began as a homebrewing-obsessed teenager.
After graduating with a B.S. and M.S. in Food Science from Oregon State University in 2002 and interning at a winery, Jessica took a job with Scott Laboratories. Over the years, she has held several positions with Scott Labs and interacted with industry professionals across North America. Jessica has been involved with all aspects of alcoholic beverage production, from material handling, processing, and fermentation stabilization and packaging.
In 2015, Jessica accepted a position at her alma mater, OSU, as an Instructor and Advisor to Fermentation Science students in the Food Science Department. After that, she moved on to Brew Dr. Kombucha, where she oversaw their Lab, QA/QC programs, food safety and regulatory compliance, and R&D. Earlier this year, the siren song of Scott Labs proved too strong, and Jessica returned yet again to head up the Enology department.
