April 30, 2026 (Jerez, Spain) — González Byass has released the 17th edition of Tío Pepe Fino en Rama, continuing a tradition that has defined the En Rama category since the winery pioneered it in 2010. Produced once a year from 100% Palomino Fino, this year’s edition carries 191 years of heritage in every glass, selected to showcase the purest, most authentic expression of Fino Sherry.
This internationally recognised and awarded Fino – Tío Pepe en Rama 2025 was selected at The World’s Best Sommelier Selection 2026 – has become a cultural icon and symbol of Jerez, paying tribute to Jerez’s gastronomic prominence and consolidating González Byass’ leadership in biologically aged wines.
Each spring, when the flor reaches its peak, winemaker and master blender Antonio Flores and his daughter Silvia Flores, rigorously select the finest casks from Bodega de La Constancia. These casks have undergone a minimum of four years of biological ageing and are bottled as a strictly limited annual release.
Bottled unfiltered and unclarified, Tío Pepe en Rama captures all the complexity and freshness of the wine straight from the butt, allowing its original character to shine through with higher aromatic intensity and greater depth on the palate. Albariza soil, Atlantic influence and a vigorous veil of flor combine to create an exceptional Fino that expresses both origin and ageing.
For the 2026 release, 95 casks have been carefully selected to bring Tío Pepe en Rama to life, expressing the distinct personality and structure of the Macharnudo and Carrascal pagos. Following an autumn with spring-like temperatures and a mild yet exceptionally rainy winter, the flor thrived in ideal humidity and temperature conditions, imparting a truly distinct vibrancy and saline character to the wine.
Winemaker and master blender, Antonio Flores, comments: “Tío Pepe en Rama is a tribute to life and joy. The mild but exceptionally rainy winter created ideal conditions for the flor to thrive, giving the 2026 release a vibrancy that feels truly alive. With En Rama, the connection between place, season and wine has never felt more present. Each edition is a search for perfection and each year the wine finds its own way to surprise us.”
Pale golden in colour with a gentle haze, as a result of the flor in suspension, its nose is intense and fragrant with notes of chalk, iodine, delicate citrus and coastal salinity, alongside aromas of nuts, chamomile, lemon peel, freshly baked bread and fresh yeast. On the palate, it is precise, fresh and savoury with a saline and slightly bitter edge. Complex and layered, flavours of nuts and citrus are balanced by a long, mouthwatering finish in classic Fino style.
Its versatility makes it excellent as an aperitif or enjoyed alongside a wide range of dishes.
Tío Pepe en Rama 2026 will be available from May onwards in all international markets.
