February 28th – The “urban gastronomy by #asktoni & ProWein” lounge will again be a special feature at ProWein, International Trade Fair for Wines and Spirits (March 19  – 21, 2023 in Düsseldorf, Germany). The special highlight for the hip, urban restaurant scene from Germany and abroad:  top chefs and trendy restaurateurs will let trade visitors “look  over their shoulders” and provide first-hand tips. All this will take place in form of relaxed, entertaining workshops – presented by Toni Askitis, a restaurateur, wine sommelier and influencer. The focus will always be on wine. In four daily workshops, gastronomy staff – whether beginners or professionals – will learn about the correct way of handing wine. The following international restaurateurs/chefs, vintners and wine guides will take part:

  • Anestis Haitidis, the wine guide of Greece and discoverer of new wine talents especially for the international gastronomy scene (Sunday, 12:00 pm).
  • Tim Tegtmeier, Pâtissier of the Year 2015 and owner of “Pure Pastry” on Düsseldorf’s Carlsplatz, in food pairing with Champagne (Sunday, 4:00 pm).
  • Saman Khoshgbari aka Flourboy, skater, creative & pizza sculpture baker from Maastricht (Monday, 12:00 pm).
  • Tibor Werzl, Bochum’s only sommelier and chef at the small, refined “Five” will discuss food pairing with Demeter vintner Stefan Bietighöfer/Pfalz (Monday, 4:00 pm) .
  • Nikolaus Alexander Pitlik, pop-up restaurateur, rock ‘n’ roller and wine freak from Austria (Tuesday, 12:00 pm)
  • Michelin-starred chef Benjamin Kriegel from the recently opened “Pink Pepper” in Düsseldorf will discuss food pairing with three Greek wine-growing estates (Tuesday, 4:00 pm)

Four customized workshops daily

Every day, four workshops will be offered tailored to the participants’ different knowledge levels on the one hand – but also reflecting the multi-faceted, international world of food and wine. The workshop “How to ProWein?! One Wine Three Glasses!” will start the series at 10:00 am – aimed at newcomers to the trade fair. Toni Askitis will explain to participants how to best find their way around ProWein. In the second part, wine tasting will be on the agenda: Using three different glasses, Askitis will demonstrate which glass is best suited for which wine. This will be followed at 12:00  pm by the “Pro to Pro” workshop. Current developments in gastronomy and the wine market will be discussed with European gastronomy professionals. A jointly conducted tasting will frame the relaxed discussion. Last year’s hit “Music in a Glass” workshop will return – a purely subjective and very popular format (daily at 2:00 pm). Toni Askitis will select three songs and, together with a winemaker, assigns them to three of his wines. The fourth workshop will address the classic “Food Pairing” – together with chefs, restaurateurs and wine producers, Toni Askitis will explain daily at 4:00 pm how wine and food are paired.

The workshops will also be broadcast worldwide via online streaming. The lounge in Hall 4 (Stand A 19) will be given a special urban touch by DJ Rafik, 6-time DJ world champion, and graffiti artist Hoker One. Registrations are not required – it’s “first come, first serve”.
