A longer ageing period is the bold choice made by the Razzaboni brothers of Ventiventi for their five signature Metodo Classico wines

October 9, 2026 (Medolla, MO) — In the winegrowing district north of Modena, Ventiventi continues to define its path in Metodo Classico with a contemporary approach that combines a family driven vision, technical precision and a strong sense of place. Now, the Razzaboni family announces a significant evolution: the extension of lees ageing for its five flagship wines.

This decision emerged naturally, following the evolution of the base wines in the cellar. What had initially been planned as roughly 30 months on the lees took a different direction, guided by regular tastings and the ability to listen to the wines over time.

“Being young means having the luxury of being surprised. We had planned for 30 months, but tasting showed us the true potential of our varieties,” explains Andrea Razzaboni. “We simply followed where the wines led us, and at 40 and 50 months we discovered that their freshness did not fade. Instead, it developed into an elegance we had not imagined. Modena is not only about speed. In the cellar, we have learnt that elegance requires patience.”

For a young winery, choosing to wait longer meant embracing changes in both technique and style. The aim was to understand how far the varieties could evolve without losing their immediacy or personality. “This phase of ageing was, in every sense, a bet on the wines’ evolution, a genuine challenge for a young estate. We discovered that our base wines have far greater ageing potential than expected. The development of tertiary aromas did not overshadow varietal character. Instead, it enhanced it, creating a perfect synergy between the identity of Modena and the elegance of Metodo Classico,” continues Andrea Razzaboni.

Extended lees ageing has brought greater completeness and harmony to the wines, without sacrificing the drinkability that remains a hallmark of Emilia’s sparkling styles. Dosages have been kept deliberately low, allowing time and grape variety to shape the final balance.

“Pignoletto, Lambrusco di Sorbara and Lambrusco Salamino di Santa Croce are exceptional varieties. At first, we feared that long ageing might diminish their freshness or compromise the authenticity of the Modena style, pushing complexity to the point of distortion,” says Andrea Razzaboni. “Quite the opposite proved right. The wines have become elegant sparkling expressions that require very little dosage, because they already express the grape and fully reflect the work in the vineyard and the long time spent on the lees.”

This evolution now translates into new ageing times for the winery’s five hallmark Metodo Classico wines.

Rather than pursuing a predetermined style, Ventiventi has chosen to follow the natural rhythm of its wines, allowing time and experience to guide their evolution. This decision reflects the identity of the estate, which is young and dynamic, yet able to slow down when needed.

This new phase fits naturally into the Razzaboni family’s vision. From the very beginning, they have aimed to offer a contemporary interpretation of Emilia’s sparkling wines, enhancing local varieties through Metodo Classico and a fully controlled production process.
