September 22, 2026 (Col San Martino, Italy) — With Ca’ Dei Noni, Follador has developed a still wine collection that brings the signature of the Col San Martino winery to some of the most fascinating wine-growing areas of Veneto. From Montello to Valpolicella, from Lake Garda to the Asolo hills, the collection spans seven regional appellations, united by a clear common thread: the ability of each wine to authentically express the place from which it originates.

Ca’ Dei Noni originates from the history of the Rossi family, the maternal side of the family of the generation currently leading Follador. This family connection brings together two paths deeply rooted in wine culture and in the Montello territory, finding expression in a project dedicated to selecting wines capable of authentically conveying their place of origin. The name Ca’ Dei Noni recalls the dimension of family roots and shared memory: a tribute to a heritage of knowledge, relationships, and sensitivity built over time through direct work in wine-growing territories and collaboration with small artisan producers.
The collection includes seven labels, both white and red wines. The Lugana DOC, produced from Trebbiano di Lugana grapes grown on the southern shores of Lake Garda, expresses the mineral freshness of this unique territory. The Passito, made from selected Veneto white grapes, offers a richer profile with notes of candied fruit and orange blossom.
On the red wine side, Montello serves as the reference territory. The Cabernet Sauvignon comes from red clay soils that provide structure and complexity; the Cabernet Veneto IGT matures in barriques before further bottle ageing; while the Riserva Cabernet Montello Colli Asolani DOC undergoes an additional drying process that intensifies its concentration and aromatic profile.
Finally, from Valpolicella come the Ripasso DOC, with its structure and depth deriving by refermentation on Amarone grape skins, and the Amarone della Valpolicella DOCG, produced from Corvina, Corvinone and Rondinella grapes subjected to the traditional appassimento process: the most complex and distinctive wine of the entire selection.
