Neighboring Wineries Welcome Visitors to Destination Tasting Room Overlooking the Paso Robles Adelaida District
February 12, 2026 (Paso Robles, CA) — Hawks Hill Ranch winery today introduced a new tasting room collaboration with Boutz Cellars, uniting two Paso Robles estate wineries within one distinctive tasting location overlooking the rugged Adelaida District. Guests may opt to taste with one or both wineries during their visit, creating a one-stop destination for experiencing some of the Adelaida District’s most acclaimed artisanal wines.

Hawks Hill Ranch and Boutz Cellars each have their own tasting bar amid the rustic elegance of a 90-year-old heritage barn with indoor lounge seating. Additional seating is available on two outdoor patios featuring panoramic views of the Adelaida District. The ambiance of the property is serene and unhurried. Guests may choose to taste with one or both brands based on availability and may bring their own picnic fare to enjoy before or after tastings. Tasting flights range from $25 to $35, and reservations are highly encouraged.
Hawks Hill Ranch is a working ranch and vineyard dedicated to producing wines of location and distinction, renowned for its co-fermented wines that feature unconventional names such as Liquidity, Limit Up and Standard Deviation. Helmed by the father-and-son team of James and Manoli Boutzoukas, Boutz Cellars specializes in estate-grown wines made from classic Greek varieties, including Assyrtiko, Moschofilero and Vidiano. Both wineries now offer distinct yet complementary tasting experiences under one roof.
Immersive Ranch Tours
In addition to its tasting room experience, Hawks Hill Ranch is renowned for its immersive Estate Ranch Tours that take guests into the heart of the winery’s estate vineyard at elevations reaching more than 2,000 feet in the Santa Lucia Mountains. These two-hour private tours feature an offroad educational excursion that touches on the ranch’s distinctive growing conditions, sustainable winegrowing methods and more. The tours culminate at a scenic 250-year-old grove of indigenous Manzanita trees, where lunch is provided.
