Tenuta Stella’s Ribolla Gialla Pas Dosé: the Sparkling Wine of Summer with a Friulian Soul

Fresh, savoury and deeply rooted in its territory, the most summery expression of Ribolla Gialla meets the cuisine of the warm season

October 19, 2026 (Dolegna del Collio, Italy) — As temperatures rise and dining moves outdoors, the wines we choose to uncork change as well. It is the season for bottles that combine freshness, lightness and character without sacrificing complexity. Within this setting comes Tenuta Stella’s Ribolla Gialla Pas Dosé Metodo Classico, an organic sparkling wine that tells the story of the Collio through one of its most representative grape varieties.

“With this label, we wanted to preserve the full identity of Ribolla Gialla and translate it into the language of the Traditional Method,” explains Erika Barbieri, winemaker at Tenuta Stella. “The result is a sparkling wine that maintains the tension and freshness typical of the variety, while at the same time gaining depth and complexity thanks to its long ageing on the lees. It is a wine that speaks very directly about its territory.”

Produced exclusively from Ribolla Gialla grapes grown in the estate’s vineyards on the hills of Scriò, this sparkling wine finds its distinctive character in balance. The perlage is fine and elegant, while the aromatic profile immediately recalls the classic fragrance of Ribolla Gialla, with notes of fresh apple, white peach and hazelnut intertwined with a pronounced mineral character. On the palate, it delivers a vibrant, citrus-driven sip supported by marked salinity, which prolongs the finish and immediately invites another taste.

If there is an ideal season for this bottle, it is undoubtedly summer. Its natural freshness and pronounced savouriness make it the perfect companion for outdoor aperitifs, seaside lunches and dinners that begin at sunset and continue late into the evening. At the table, it pairs effortlessly with light appetisers, seafood crudités and fried fish, while also finding particular harmony with prawn and squid skewers, vegetable flans, prosciutto rolls and seasonal vegetable dishes.

Its gastronomic versatility is particularly remarkable, allowing it to accompany an entire meal and even match one of the most intriguing trends in contemporary dining: gourmet pizza. The combination of acidity, salinity and the creamy texture of the perlage enables it to complement rich ingredients and diverse textures while always maintaining a clean and agile palate.

Ribolla Gialla Pas Dosé also represents an effective synthesis of Tenuta Stella’s production philosophy. The organic winery has chosen to focus primarily on Friuli’s native grape varieties in order to offer an authentic expression of the Collio. It is an approach that places territory, sustainability and the pursuit of wines capable of precisely expressing their place of origin at its core.

At a time when consumers are increasingly looking for sparkling wines with a strong sense of identity and origin, this label from Tenuta Stella offers a different perspective on Italian Traditional Method sparkling wine: that of a historic Friulian grape variety which, thanks to the terroir of the Collio, finds one of its most elegant and contemporary expressions.

About Tenuta Stella
Located in Scriò, in the municipality of Dolegna, in the highest part of the Collio, surrounded by mountains yet close to the sea, and shaped by the Bora wind and cool air currents, Tenuta Stella was born in a territory seemingly created specifically for viticulture.

It is here that Sergio Stevanato established a winery whose production is based almost exclusively on native Friulian grape varieties, capable of expressing wines that are both captivating and distinctive, and above all able to tell the story of the land from which they originate with every sip.

The estate is managed by Alberto Faggiani, Agronomic Technologist and Head of Winemaking Production, and Erika Barbieri, Winemaker, Technical Director and Marketing Manager of Tenuta Stella.

Quality and authenticity have been the guiding principles of Tenuta Stella since its foundation in 2009. These values are closely intertwined with a sustainable approach aimed at preserving the precious ecosystem in which the winery is located, as well as with organic production practices that minimize environmental impact and exclude the use of chemical pesticides and fertilizers.

It is through the combination of these values that Tenuta Stella’s philosophy emerges: going beyond wine production to act as true cultivators of life, guardians of an ecosystem that is as rich as it is delicate.
