Co-founded by Oscar Valle and from the acclaimed team behind Licorería Limantour – consistently ranked among the World’s 50 Best Bars – Despacho Margarita is led by bartenders deeply rooted in Mexican hospitality, sustainability, and contemporary cocktail culture. Valle, whose career bridges New York City and Mexico, brings a global perspective grounded in Mexican flavors and traditions.
At the helm is Bar Manager Diego Valencia, originally from Celaya, Guanajuato, whose experience spans leading bar programs in Tulum and Bacalar with a focus on Mexican distillates, sustainability, and locally driven creativity. Valencia has shaped the cocktail program around direct, balanced drinks that emphasize clarity, technique, and intentionality without being prescriptive.
The bar’s mission is to reclaim the margarita for Mexico; a response to the irony that one of the world’s most popular cocktails is often better known in the U.S. than it is at home. Through ongoing testing, thoughtful tequila selection, and careful control of balance and acidity, the team is focused on serving the very best margarita one can find and bringing the cocktail back to Mexico.
The menu includes a crisp, spirit-forward Margarita Clásica, a carefully dialed-in Frozen Margarita, and variations such as the Spicy Margarita and Tommy’s Margarita, all highlighting freshness and the natural character of agave. Beyond margaritas, the cocktail program expands into agave-forward and globally inspired classics, including mezcal cocktails and modern reworks, all interpreted through a Mexican lens.
A concise, corn-forward food menu rounds out the experience. Everything is designed to be small, craveable, and eaten with one hand – perfect for the bar or table. Snacks range from spiced peanuts and escabeche-style vegetables to dried beef, while warm dishes highlight masa, chiles, and regional flavors through quesadillas, tacos, soups, and more.
