Sauvage Spectrum Winery Announces the Grand Opening of the Ouray Wine Lounge & Tasting Room August, 20th

15 August – In addition to being awarded Colorado Winery of the Year both in 2021 & 2022, Sauvage Spectrum Wine Lounge officially opened their second location for business on Monday, August 1st, 2022, after only a swift 46 days of renovations. Remodeling the historic 1881 Wright Building, located adjacent to the famous Wright Opera House was a privilege for the team at Sauvage Spectrum. An area rich in wild west folklore, mining tradition, and offering the foremost recreation opportunities, was in dire need of a Colorado Wine representative.

Grand Opening festivities will be held on August 20th starting at 3pm with the debut of their new Après Hour. Offering discounts on red, rosé, & white tap wine from 3pm — 6pm.

A tasting bar, a luxurious tufted lounge, and casual low top seating along with their signature “Celebrate Everyday” neon signage strikes a familiar note in the new space. A cruvinet bottle tap wine system and tap wine from kegs dispense the wine with a focus on quality and sustainability.

Sauvage Spectrum is offering a non-pretentious wine experience with small bites and dessert items, while focusing on wine education. A small retail space offers To-Go bottles of wine at a 20% discount from the on-premise pricing. Guests will discover unparalleled, breathtaking views of Ouray’s Amphitheater while enjoying a glass or flight of their favorite Sauvage Spectrum wine.

The new Wine Lounge will allow for the exponential growth in production of the company’s trademark sparkling wine program. Sparklet is Colorado’s most widely distributed and first fun, fruit forward, and affordable sparkling wine that has been shaking up the Wine industry in Colorado since debuting in 2019.

These wines have a fresh, crisp and aromatic, fruit-forward character finished under crown cap. A modern take on tradition, using a proprietary finishing technique allows Sparklet to be affordable to the everyday wine drinker.

Their portfolio of award-winning still wines, natural wines, multiple sparkling wines, and a new low alcohol, seltzer alternative, Piquette will be available for purchase.

Sauvage Spectrum also presents their exclusive wine club, The Cellar Select Society. As well as curated events in the near future for the locals and visitors of the City of Ouray.

After working together on numerous wine projects, Winemaker Patric Matysiewski and Grapegrower Kaibab Sauvage formed a partnership in 2019 with the goal to create a new breed of estate winery, Sauvage Spectrum. Our vineyards are situated in the Grand Valley AVA, and the magical town of Palisade sitting at 4,728′. Grown with melted snow from the steep slopes of the Rocky Mountains, via irrigation from the Colorado River. The “million-dollar breeze” blows through the high desert valley, developing thick skins on our grapes. The sunshine beats down on the valley floor, an ancient riverbed, radiating off the Bookcliffs and surrounding mesas. Warm days and cool nights allow our fruit to ripen but retain acidity for balance. Alluvium silt, sand, and clay loam soils with the addition of volcanic rock lend a unique minerality to our wines. Every year new grape varietals are planted for research and development, to further define the future of Colorado wine. We are not interested in mimicking wines from other regions. We are developing grapes with the intention to produce the true taste of Colorado wines.
