October 22, 2026 (Walla Walla, WA) — Christophe Baron opens the doors to the property’s newly restored, original 1910 craftsman for an intimate, convivial afternoon in the spirit of the long French lunch, in collaboration with Michelin-starred chef Matthew Lightner. With The Bionic Lunch, Baron nods to his upbringing in Champagne, and to the way he entertains at home in Walla Walla.

Baron has long wanted to offer a culinary experience at his storied and coveted Cayuse Vineyards, giving guests the chance to taste through the rest of the Bionic Wines portfolio: Champagne Christophe Baron, No Girls, Horsepower, Hors Catégorie, and other rarity pourings. Until now, Bionic Wines was open just one weekend a year for members to pick up their allocations, making this a rare invitation and the most access Bionic has ever extended to the public.

The collaboration with chef Matthew Lightner began the way the best ones do, over a meal. The two found immediate kinship in their shared philosophies on farming, seasonality, and hospitality that is unfussy but precise. Together, they have built an impressive team, anchored by that shared sensibility.

Bionic Wines has added Resident Chef Dan Clark (Vermejo, Canlis), who will oversee menu development and execution, and Master Sommelier Tyler Alden (Willows Lodge & Barking Frog) as Director of Hospitality, who will shape the guest experience, wine program, and pairing philosophy. Clark and Alden bring a new level of hospitality to Walla Walla.

The menu is inspired by the ingredients and seasons of the Pacific Northwest, with each dish composed around a specific bottle Baron has chosen from the Bionic Wines cellar. The overall philosophy is French countryside with no rules, local and seasonal, including global flavors and touches.

Elise Porter, founder of Mamo Collective, designed the space the way Baron approaches his wines, with precision and authenticity, layered with playful moments.

His wines are exacting and old-world in their discipline, but his labels are bold, artist-driven, and unapologetically eccentric, the kind he cheerfully admits would never fly in France, which he considers a win. That same irreverence shaped the room. The goal was never a restaurant. It was Christophe’s dining room, if it happened to seat twenty. Sleek USM shelving shares the floor with commissioned tables built from salvaged skateboard decks, and natural stone meets saturated color. Look closely and you’ll find frogs hiding everywhere, a nod to his nickname, “the bionic frog.”

Reservations for The Bionic Lunch are available Thursdays–Sundays on Tock. There is one seated lunch per day ($150 per person) beginning at 11 a.m. For those who wish to go further, a selection of rare Cayuse pours may be added for an additional fee.

About The Bionic Experience
The Bionic Experience is vigneron Christophe Baron’s first hospitality project, beginning with The Bionic Lunch, situated in the property’s original 1910 craftsman, now restored, for an intimate, convivial afternoon much like the way he entertains at home in Walla Walla. About Bionic Wines
