Made from Lambrusco Salamino di Santa Croce DOC, this organic Brut sparkling wine originates in the Modena plains and offers a new interpretation of Emilia’s iconic bubbles

September 21, 2026 (Modena, Italy) — In the heart of the Modena plains, where the tradition of Lambrusco represents one of the most authentic expressions of Italian winemaking, Ventiventi presents Rouge de Noirs, an organic Traditional Method Brut sparkling wine that embodies an innovative and ambitious vision of the territory. Born from the desire to enhance Lambrusco Salamino di Santa Croce DOC, it combines regional identity, a commitment to quality, and an international outlook.
Founded by the Razzaboni family, Ventiventi belongs to a new generation of Emilia-Romagna wineries redefining the narrative of Lambrusco. No longer seen solely as a convivial and immediate wine, Lambrusco is increasingly recognized as a category capable of expressing identity, precision, and complexity. Within this vision, Rouge de Noirs plays a central role. It is one of the winery’s most distinctive Traditional Method wines and reflects the ambition to bring Lambrusco Salamino di Santa Croce into a new dimension while remaining true to its origins.
Rouge de Noirs is the result of a winemaking journey aimed at reinterpreting Lambrusco through a contemporary lens, elevating its expressive profile through the Traditional Method and an extended 40-month aging on the lees. This demanding process requires time, expertise, and meticulous attention to detail, but it allows the wine to achieve remarkable complexity, elegance, and aromatic depth. Organic certification is a fundamental part of Ventiventi’s philosophy, reflecting its commitment to sustainable and environmentally responsible viticulture. In this context, Rouge de Noirs becomes an authentic expression of a territory looking toward the future without abandoning its roots, while highlighting one of the most representative grape varieties of the Modena tradition.
Lambrusco Salamino di Santa Croce DOC is deeply connected to the Modena plains. Ventiventi interprets the variety starting from its estate vineyards, cultivated on clay-rich soils and farmed according to organic principles. The choice of the Traditional Method allows the winery to focus on time, structure, and finesse, transforming a grape historically associated with freshness and conviviality into a Brut sparkling wine with a more focused and refined profile.
Rouge de Noirs is produced exclusively from 100% Lambrusco Salamino di Santa Croce grapes grown in the estate’s vineyards. Vineyard management, careful grape selection, and extended lees aging enable the wine to maintain a strong connection to its place of origin while speaking a broader, more contemporary language. The result is an organic red sparkling wine that preserves the vitality of Lambrusco while expressing it in a more precise, dry, and modern style.
The project is part of a broader reflection on the future of Lambrusco in international markets. In recent years, the image of the category has increasingly moved away from past stereotypes thanks to producers who have highlighted its dry, food-friendly, and terroir-driven expressions. Rouge de Noirs contributes to this evolution with a clear proposition: demonstrating that Lambrusco can also be a Traditional Method sparkling wine, a contemporary table wine, and a credible ambassador of high-quality Italian sparkling wine production.
“With Rouge de Noirs, we wanted to tell the story of Lambrusco Salamino di Santa Croce from a different perspective. The Traditional Method allows us to work with time and precision while preserving the authentic character of both the grape variety and our territory,” says Riccardo Razzaboni, Export Manager and co-owner of the winery.
Organic certification completes this vision. For Ventiventi, sustainability and quality are not separate paths but two essential components of the same project: crafting wines that express their territory in a coherent, pure, and recognizable way. In Rouge de Noirs, this philosophy translates into a constant search for balance between agricultural identity, winemaking expertise, and openness to an international audience increasingly interested in distinctive, gastronomic wines.
The growing interest in the project has been confirmed by numerous awards and recognitions from wine guides, critics, and international competitions. Rouge de Noirs received 95 points from Le Guide de L’Espresso 2025, 94 points from Kerin O’Keefe and The Wine Journal (Eros Teboni), 92 points from Wine Enthusiast, Gardini Notes, and 5StarWines, and 91 points from James Suckling, in addition to medals and accolades from the Decanter World Wine Awards, Concorso Enologico Città del Vino, Glass of Bubbly, Veronelli, Gambero Rosso, Guida Bio, and Vini Buoni d’Italia.
