The company, which began as Mercenary Canning Solutions under founder Jason Fullmer, expands its successful mobile bottling business to now offer full custom vinification services at the new anchor facility. Joining Fullmer in the partnership is Josh Baker, trusted veteran winemaker and production executive. Together, the pair brings 35 years of combined winemaking and beverage production experience. Steve Adamski and Ty Green serve as the company’s legal and financial advisors.

Jason Fullmer
Jason Fullmer is a winemaker, entrepreneur, and beverage production specialist with nearly two decades of experience across Napa Valley and California’s Central Coast. Having mastered every stage of beverage production, he founded Mercenary Canning Solutions in 2018 to give small, independent producers access to the same high-level packaging and operational support typically reserved for larger companies.

Since then, Mercenary has evolved from a mobile canning operation into a fully integrated production partner for wineries, breweries, and beverage brands across California. Following the expansion of Mercenary Premier and the acquisition of the former Baileyana Winery facility, Jason combines deep winemaking expertise with a practical operator’s mindset to deliver reliable solutions that help clients streamline operations and build successful, long-term brands.

Josh Baker
Josh Baker brings over 25 years of experience in the California wine industry, with winemaking and leadership roles across some of the most respected production organizations in the business. His background includes senior positions with E. & J. Gallo, Diageo Chateau & Estates, Chalone Wine Group, Barton & Guestier, Alpha Omega Collective, and Phase 2 Cellars, where he led custom crush operations for nearly a decade.  

His track record of establishing mutually beneficial relationships with numerous industry leaders is unmatched. Josh’s experience spans both premium and high-volume production environments, with a focus on exceptional team management, wine quality, and operational efficiency. His long-standing relationships across the industry and reputation for consistent execution play a key role in driving Mercenary Premier’s production platform forward.
