May 19, 2026 (Bordeaux, France) — Christophe Bardeau, owner of Domaine Roses Camille, the only fully kosher winery in France, has released Audace du Petit Moulin 2021, his first mevushal Bordeaux. The wine is now available in the U.S. through Liquid Kosher and is fully CRC certified.
A veteran Pomerol winemaker known for producing some of the most serious kosher Bordeaux in France, Bardeau developed Audace as a more accessible counterpart to his estate wines. The release extends his work into a format built for restaurant by-the-glass programs, catered events, and everyday kosher occasions, while preserving the precision and Bordeaux sensibility that define his portfolio.
Audace du Petit Moulin was designed with freshness and purity as the priority. The fruit is grown on sandy-gravel soils, and the wine is fermented in concrete and finished briefly in neutral oak, preserving fruit clarity while adding subtle texture. In the glass, it shows red cherry and crushed violet aromatics over a core of fine-grained tannins, clean minerality, and a smooth, balanced finish. The mevushal process was integrated into the wine’s design rather than treated as an afterthought, allowing the wine to retain structure and drinkability through flash-pasteurization. The result is a rare mevushal Bordeaux that remains composed and serious in the glass.
“With Audace, the goal was to make a wine that holds up to the mevushal process without losing the character that makes Bordeaux Bordeaux,” said Christophe Bardeau. “It should feel polished and approachable, but still recognizably the work of a Bordeaux winemaker.”
