Arabilis Announces Fall 2025 Wine Releases Featuring New Sparkling and Chardonnay Expressions

New Columbia Valley Traditional Method Sparkling Wine Opens to Non-Club Members 

September 8, 2025 (Amity, OR)Arabilis, the Willamette Valley winery founded by PhD scientists-turned-vintners Allison and Kenny McMahon, announces its Fall 2025 wine release line-up. The allocation features two single-vineyard Chardonnays and a Columbia Valley methodé traditionnelle sparkling wine aged for 46 months on tirage.

The release includes the 2023 Pearlstad Vineyard Chardonnay (club-exclusive), the 2023 Stiling Vineyard Chardonnay, and the 2020 Columbia Gorge Extra Brut. Each wine reflects Arabilis’ focus on scientific precision married with site expression and classic Champagne-inspired technique. Showcasing two distinct sides of the Eola-Amity Hills, the Pearlstad Vineyard Chardonnay reflects the ancient seashore soils and cool evening winds of the west-facing slopes, while the Stiling Vineyard Chardonnay highlights the volcanic soils and morning light of the east-facing range.

2023 Pearlstad Vineyard Chardonnay — Club Exclusive

Pearlstad Vineyard, Eola-Amity Hills
Planted in 2017 by Ken Pearlman and Dana Baker, this 18-acre site sits on the windward side of the Eola-Amity Hills, directly in the Van Duzer Corridor’s cooling winds. At 400–600 feet, its Chardonnay grows in sandstone, marine siltstone, and sandy loam—often revealing fossils of clams and oysters in the rows. 


2023 Stiling Vineyard Chardonnay — Available now to all consumers
“Shows off brioche tones on the nose with mango, orchard fruits and shades of white flowers. The palate is soft and elegant with good viscosity.” (93 points, Owen Bargreen)

Stiling Vineyard, Eola-Amity Hills
Contracting Chardonnay from this sustainably farmed site, the vineyard sits at 360–420 feet on gentle east-facing slopes of the Eola-Amity Hills, benefiting from Van Duzer winds and morning sun. Soils range from Jory to Ritner, with volcanic and sandstone rocks and even massive Missoula boulders surfacing among the vines. Arabilis also works with their entire Pinot Meunier block at 450 feet on Jory clay.


2020 Columbia Gorge Extra Brut (70% Pinot Noir, 30% Chardonnay) — Available now to members; Sept. 4 to all consumers

Dampier Vineyard, Columbia Valley
Owned by Paul and Pier Huber, this small site sits 1,100–1,200 feet up on Underwood Mountain, overlooking the Columbia River. We source Chardonnay from an old Wente clone block planted in the early ’90s. Constant Gorge winds and dramatic diurnal shifts preserve high natural acidity, while the southeast slope allows slow ripening. Our only wish: there was more fruit to go around.


Arabilis launched in 2021 as a small, terroir-driven project blending Allison and Kenny McMahons’ backgrounds in flavor science with a deep reverence for Oregon’s vineyards. Arabilis is earning growing acclaim, with their 2022 Eola-Amity Pinot Noir just named in VinePair’s Best Pinot Noirs of 2025 and consistent 93+ scores from leading wine critics. They were also among the featured wineries at the inaugural Method Oregon celebration of traditional method sparkling wine and continue to deepen their craft through study with masters in the Champagne region.
