Raising the Bar on Bubbles: Tasting House Expands Champagne Program

 Silicon Valley’s Premier Wine Bistro & Champagne Bar Introduces Rare, Refined New Champagne-Centered Offerings

September 5, 2025 (Los Gatos, CA) — There are several sparkling new reasons to raise a glass at Tasting House. The destination-worthy wine bistro and Champagne bar bringing highly curated wine and food pairing experiences to downtown Los Gatos has recently expanded its Champagne offerings, adding to what was already a distinctly robust program. Their complete wine list now offers close to 120 different Champagnes – a mix of classic region, small grower-producer and special club offerings – and boasts one of the most extensive selections of Brut Nature Champagnes in the country. 

Here are the latest updates:

Cuvée Companions: The 15-course Chef’s Tasting Experience ($175/pp) at Tasting House now has an optional pairing add-on (additional $200/pp) that is exclusively Champagne. As the tasting menu evolves season to season, so will the accompanying pairing selection.

Flight of Fancy: Three new tasting flights recently made their debut on the Champagne bar menu. Each flight consists of three Champagnes (5 oz pour of each): 

Sabrage Showcase: Tasting House’s weekly sabering demonstration takes place every Friday at 5:00pm outside of the Champagne bar. Tasting House was recently awarded the rank of Caveau de Sabrage, a specific designation for a venue with a formal affiliation with an Embassy of the Confrérie du Sabre d’Or, with staff who are members of the Confrérie as well as licensed sabrage instructors (Maîtres-Sabreurs). With this recognition, Tasting House joins an exclusive collection of restaurants, hotels, wine bars, and other establishments known for their dedication to both fine dining and the enjoyment of Champagne.

Menu Makeover: After a recent refresh, Champagne bar food offerings now include some slightly heartier fare. Notable additions include a seasonal salad and two sandwiches: a luxe riff on the traditional grilled cheese with truffle and manchego; as well as an avocado toast sandwich with English cheddar, everything bagel seasoning, and pickled onions.

Lively Libations: The Champagne bar also introduced a duo of seasonally rotating cocktails. The current iteration reimagines global staples like the Bellini—this version inspired by peak-season peaches from a nearby orchard—and a Spritz, with Champagne used in place of Prosecco for a more elegant expression. 

Privée Pours: Tasting House now offers a selection of exclusive, reservations-only, guided private Champagne tasting experiences; each of which includes a flight of four 3 oz tastes of Champagne. Available by reservation only via OpenTable. Optional light bites are available for preorder for any of the four experiences currently on offer:

  • Grower Producer Champagne Experience – an ideal introduction to the world of boutique Champagne, highlighting small-production grower producer houses – many of which are organic and biodynamic. $85/pp (4 person minimum)
  • Classic Houses of Champagne Experience – taste through a tour of the most important regions of Champagne and the noble producers that historically and stylistically embody those regions. $120/pp (4 person minimum) 
  • Legendary Reserve Champagne Experience – explore the depth and elegance of vintage champagnes that showcase the best-of-the-best of the art of Champagne. $250/ pp (4 person minimum) 
  • Champagne Party Experience –  the option to host an unforgettable private Champagne tasting for up to 12 guests, either at the Tasting House Champagne bar or at a separate private location. Includes a curated selection of premium Champagnes. $1,500 minimum for a 3-hour private event.

Tasting House’s kitchen is led by Executive Chef Julian Silvera, who spent his early culinary career in restaurants in his native NYC working with chefs like Wylie Dufresne and Nahid Ahmed before lending his talents to Florida restaurant, Knife and Spoon, for which he helped garner a coveted Michelin star. 

Dinner at Tasting House is offered in the main dining room Tuesday through Saturday between 5:00pm and 10:00pm. Their recently launched Afternoon Tea & Champagne Experience is offered on Fridays and Saturdays from 11:30am to 2:30pm. The Champagne bar is open Tuesday through Saturday from noon to 10:00pm.
