Former Mosu Hong Kong Head Sommelier Brings International Fine-Dining Experience and Expertise in Korean Traditional Spirits to New York City
November 2, 2026 (New York, NY) — Joo Ok, Chef Shin Chang-ho’s acclaimed Korean fine-dining restaurant in Manhattan’s Koreatown, announces the appointment of Bob Kim as Head Sommelier. An Advanced Sommelier through the Court of Master Sommeliers, Kim brings extensive experience from Hong Kong’s fine-dining scene, most recently serving as Head Sommelier at Mosu Hong Kong.

Originally from South Korea, Kim studied Culinary Arts at Woosong University before beginning his career in wine at Wine365. He later relocated to Hong Kong, where he oversaw wine programs for three Black Sheep Restaurants concepts: Grand Majestic Sichuan, Associazione Chianti, and Magistracy Dining Room. Most recently, he spent nearly three years at Mosu Hong Kong, developing wine and Korean traditional liquor pairings. His accolades include the 2025 Best Sommelier award from RBHK, multiple wine pairing awards, and recognition from WINE LUXE magazine.
At Joo Ok, Kim will lead the development of the restaurant’s beverage program, bringing a renewed focus to Korean traditional spirits, thoughtfully curated wines, and innovative pairings that complement Chef Shin’s cuisine. Among his priorities are developing a dedicated Korean traditional liquor pairing experience, expanding non-alcoholic offerings, and exploring house-made fermented ingredients and interactive tableside beverage service.
“Bob brings a thoughtful perspective to the relationship between food and beverage, which is especially important to what we’re creating at Joo Ok,” says Chef Shin Chang-ho. “His understanding of both wine and Korean traditional spirits, combined with his culinary background, makes him a natural fit for our team. We’re excited to work together to develop pairings that complement our cuisine and introduce guests to new aspects of Korean food and drinking culture.”
“I have always wanted to challenge myself in New York, which feels like the Premier League for sommeliers,” says Kim. “My goal is to build a beverage program that goes beyond conventional pairings, bringing together my culinary background, a thoughtful approach to wine, and the depth of Korea’s traditional spirits. I hope to show just how remarkable a beverage program can be when it is rooted in Korean heritage and shaped by a Korean sommelier.”
Kim’s approach reflects Joo Ok’s commitment to celebrating Korean culinary traditions through contemporary techniques, while introducing guests to the diversity of Korea’s drinking culture.
