From an Organic, Biodynamic Estate Garden to a Growing Network of Central Coast Farms, Cello’s Culinary Team Brings Exceptional Fresh, Seasonal Flavors to Every Course
August 13, 2026 (Paso Robles, CA) — Cello Ristorante & Bar at Allegretto Vineyard Resort continues to expand its roster of local purveyors, adding to the estate’s chef’s vegetable and herb garden, fruit and olive trees, and vineyards, all of which are organically and biodynamically grown.
Cello’s newest partnership is with Misty Oaks Vineyards, a boutique winery and farm in Paso Robles’ Geneseo District, which, under the direction of the culinary team, will cultivate and produce ingredients specifically for the restaurant’s seasonally inspired menus. Items will include heritage tomatoes, eggplant, beans, jalapeno and Anaheim peppers, and zucchini, among others.
Cello’s culinary team works with a growing list of Central Coast farmers and producers. To name a few, Hayashi Farms and Bautista Farms contribute additional produce, while Mighty Cap Mushrooms supplies fresh mushrooms. Taylor Ranch provides bison, Stepladder Creamery supplies cheese, Alle Pia supplies salami, and Magnolia Produce rounds out the roster with additional produce. Together, these relationships give Cello’s menu an even deeper connection to the region’s farmers and producers.
Cello Ristorante & Bar features rustic Northern Italian fare crafted from regionally foraged and farmed ingredients, paired with an extensive domestic and international wine list, garden-to-glass cocktails, and craft beers. These new partnerships with Misty Oaks Vineyards and other local farmers and producers reinforce the restaurant’s farm-to-table philosophy, giving guests an even closer connection to the ingredients on their plate.
