Atlantique by La Fabrique Eric MILLARD – Burgundian cooper Eric Millard introduces a barrel unlike any other – Atlantique. 36 month air dried haute futaie oak spends a month submerged in the Atlantic ocean before returning to Burgundy. The staves are then rotated by hand daily at the cooperage to ensure even drying to 20% saturation. Eric toasts the barrels using his exceptionally long toasting methods to coax out an expression from the wood that connects the power of the ocean with the energy of 200 year old trees. The results are ocean spray and seemingly endless texture for your whites and umami depth for your reds. Eric has unlocked the fifth taste for your barrels.
Aynura by Jean Louis Bossuet, Tonnellerie BOSSUET – One of the last of the old guard of great Bordeaux coopers, Jean Louis Bossuet introduces Aynura, his chef d’oeuvre. 36 month air dried staves from 250 year old trees in France’s legendary forests are sorted to a tightness of less than 1mm. These barrel staves are then toasted progressively over 12 hours. The results are incredible length of fine tannin and an aromatic elegance worthy of your top wines. If you’re still looking for your “the best barrel I’ve ever tried,” – go with the Aynura.
Fassbinderei Klaus PAUSCHA – Located in the Styrian wine region of southern Austria, the PAUSCHA family has been crafting large format casks for five generations. Their generational know how has led to an elite loyal clientele spanning Europe’s major wine growing areas from Piedmont to Priorat. An expert team of craftsmen is lead by 31 year old master cooper Jakob Pauscha. Pauscha casks have seriously thick staves.
