Corollary celebrates the season with special tastings featuring limited-production bottles, including magnums

October 7, 2025 (Amity, OR) — Corollary Wines announces its fall 2025 releases, featuring the highly anticipated 2019 Cuvée One Extended Tirage, alongside a series of seasonal tasting experiences that celebrate Oregon’s growing reputation for world-class traditional method sparkling wines.
The newly released 2019 Cuvée One Extended Tirage is one that founders/winemakers Jeanne Feldkamp and Dan Diephouse have been eagerly awaiting. Aged five years en tirage, it shows layers of lemon curd, orange blossom, and graham cracker, with added depth and minerality that reflect the influence of the blend’s 7% pinot blanc component. This very limited release exemplifies Corollary’s commitment to crafting wines that balance texture, elegance, and expressive terroir.
“Every year, we set aside a small portion of our Cuvée One for extended aging,” said co-founder Jeanne Feldkamp. “After five years en tirage, this wine is even richer, more complex, and a true reflection of what Oregon sparkling can achieve with time.”
Also debuting this fall are club-exclusive late disgorgements of Cuvée One and Cuvée One Rosé, each aged 36 months en tirage. Collectors are encouraged to cellar these releases and explore their development over the coming years, as Corollary continues to highlight the dynamic aging potential of Oregon sparkling wine.
These new offerings follow the sold-out inaugural Method Oregon Grand Tasting earlier this summer, which united 22 Oregon sparkling producers and bubbles enthusiasts from across the country—earning national acclaim and headlines such as “Oregon Sparkling Wine Proves Itself on the Global Stage.”
Fall Experiences at Corollary
Fall Release Party & Club Pickup Weekend – Oct. 11–12, 2025
Celebrate the new releases and the close of harvest with a guided tasting and small bites from Chef Javier Santos, featuring produce from Corollary’s onsite garden. Club allocations will be available for pickup. Reservations required.
Magnum Tastings – Nov. 15–16, 2025
An intimate, seated tasting experience featuring Corollary’s rare sparkling magnums, including newly released formats. Guests will explore side-by-side comparisons with 750mL equivalents, showcasing the effects of cork aging and lees aging. Limited seating; advance reservations required.
Corollary will also be popping open some of its favorite bottles around Portland and the Willamette Valley this fall season. About Corollary Wines
Corollary Wines, founded by Dan Diephouse and Jeanne Feldkamp, has been creating distinctive traditional method sparkling wines in Oregon’s Willamette Valley since 2017. The couple began their path to winemaking by learning as much as possible about sparkling wine through tastings, visiting their favorite Champagne grower-producers and eventually experimenting with traditional-method sparkling cider in their garage. They are dedicated to exploring the terroir of the region and its expression in every bottle. Corollary currently produces about 2000 cases annually. They are committed to working with growers who follow sustainable farming practices. As an extension of this commitment, they recently purchased an expansive 57-acre property in the Eola-Amity Hills AVA that has been planted specifically for sparkling wines. Management of the property will be guided by regenerative agriculture principles. Corollary opened its tasting room in May 2024.
