The Calling Introduces New Paso Robles Cabernet Sauvignon

February 15th – Celebrated California winery The Calling is thrilled to announce the release of the new 2021 Paso Robles Cabernet Sauvignon, the brand’s first wine sourced from the region, marking an important step for The Calling’s growth. As one of the premier areas for growing quality Cabernet in California, Paso Robles is a natural selection for the brand’s latest release. The fruit is sourced specifically from the Estrella District, meaning “star” in Spanish and derived from the ridgelines that resemble rays of a star and the Estrella River that runs through the region, with elevations ranging from 745 to 1,800 feet above sea level.

Due to a mild growing season, the 2021 harvest in Paso Robles produced lower than typical yields, which created deep flavor, intense color, good acidity, and manageable tannins, resulting in incredible quality fruit.

Upon arrival to the winery after harvest, the grapes underwent a cold soak followed by small batch fermentation and aging of 18 months in 100% French oak.  The resulting wine is a deep plum color with rich, complex aromas of blackberry, mocha, and warm vanilla spice. The elegant and refined palate offers flavors of cherry pie, coffee with a spicy oak finish.

This latest release is a display of the passion and dedication that goes into the creation of every bottle of The Calling. Each wine is a thoughtful collaboration between the Sonoma-based winemaking team, esteemed family grower partners, and founders, Jim Nantz and Peter Deutsch. Winemaker James MacPhail works directly with growers to source grapes from iconic, sustainably farmed California vineyards, now for the first time expanding to Paso Robles. Together, they give each of The Calling’s handcrafted Chardonnays, Pinot Noirs, and Cabernet Sauvignons a clear, singular voice, vintage after vintage, with over seventy 90+ ratings since the brand’s first vintage in 2012.

Recommended spring and summer food pairings with The Calling’s new Paso Robles Cabernet Sauvignon include high quality red meats like hanger steak or filet mignon, lamb, red sauce pasta and delicious hard cheeses.

The Calling 2021 Paso Robles Cabernet Sauvignon retails for $30 and is available online at thecallingwine.com and at local retailers nationwide where The Calling is sold.
