The pores of porcelain are smaller than that of stoneware, making the vessel extremely practical for wines and juices that are very sensitive to oxidation. The egg shape allows for slow convection of liquid, creating texture and a balanced lees contact in the wine. The porcelain is inert and therefore easy to clean and sanitize.
