Cooper’s Hawk Winery & Restaurants Names Beth Scott as Chief Restaurant Officer 

CHICAGO, IL, May 13, 2021Cooper’s Hawk Winery & Restaurants, one of the nation’s leading casual  dining restaurant brands today announced the addition of Beth Scott as Chief Restaurant Officer.

In Scott’s role, she will lead operations for 45+ restaurants and oversee 6,000 employees while supporting  the growth of new restaurants and improving operational efficiency. Previously, Scott served as President of  Fleming’s Prime Steakhouse and Wine Bar (a Bloomin’ Brands company) with $300M in annual revenue,  where she was responsible for long range strategic planning for 65 restaurants and 4500+ employees. 

Prior to joining Bloomin’ Brands, Scott led Food & Beverage Experience Planning and Integration for Disney Parks & Resorts. Across the full scale and scope of those operations, Scott was responsible for the reimagining and development of concepts, programs, tools, and resources that enabled the company’s food & beverage operations teams to deliver dining experiences that produced lasting memories for millions of guests. 

Scott has a diverse hospitality background having held senior positions with Hilton Hotels & Resorts, Loews  Hotels, Todd English’s Olive Group, and House of Blues Entertainment Group. Beth is a passionate advocate  for the restaurant industry, serving as a board member for the National Restaurant Association. She is also  committed to advancing opportunities for women in the industry through company women’s resource groups,  through industry-events and speaking engagements (e.g., Women’s Foodservice Forum and others), and  through engagement with student activities at Cornell, Boston University, and other university programs. She  was named to NRN’s 2019 and 2021 Power List – fifty people who represent the best in restaurant leaders.
