Aÿ, Champagne, January 29, 2025 – The Association of Ratafias Champenois, Marc, and Fine Champenoise once again showcased the vibrant spirit of Champagne by hosting the third edition of its flagship annual event: LE CHAUDRON.

Burgundy has its Paulée, Champagne has its Chaudron! This year, Maison de Champagne Henri Giraud in Aÿ welcomed around a hundred participants—including winemakers, chefs, sommeliers, and mixologists—gathered around Alexis Leconte, president of the Association. Together, they celebrated the ancestral heritage of Champagne’s traditional alembics, which operate every winter from December to March, and explored the region’s unexpected treasures: Ratafia Champenois, Marc, and Fine Champenois.
A Heritage at the Heart of the Event
Le Chaudron, a symbolic name echoing the essential alembics used in distillation, shines a light on centuries-old traditions. Ratafia, for instance, was born out of the need to preserve fruit during the era of great maritime explorations. This unique savoir-faire—halting the fermentation of grape must by adding alcohol—has given rise to rich, complex spirits that captivate the most refined palates.
Once confidential gems, these Champenois spirits are now gaining increasing recognition, with the strong development of Ratafia Champenois. Guests shared rare and precious bottles, offering a dazzling demonstration of Champagne’s diverse and rich products—beyond its world-renowned bubbles.

The event also reinforced the importance of Champagne’s liquid heritage. In a warm and convivial atmosphere, guests exchanged insights on the secrets of distillation, aging, and gastronomic pairings.
