Michelin Starred Restaurant Pays Tribute to its Journey with Limited-Edition Wine
BARCELONA (June 12, 2024) – Paying tribute to its 15th anniversary, the award-wining restaurant, Enoteca Paco Pérez at Hotel Arts Barcelona, today announced its collaboration with Oller del Mas in creating a wine that encapsulates fond memories in an unparalleled limited-edition wine, Onades. An extremely limited 251 bottles (€400/bottle) were created by members of the Enoteca Paco Pérez team.
“In collaboration with Oller del Mas, a local winery located in the heart of Catalonia, we have created a wine that honors the pure magic of the sea, its origin, and sustainability,” noted Chef Paco Pérez of Enoteca Paco Pérez. “Sharing the same pillars as Oller del Mas: family, respect for origin, and commitment to our land, Onades is a wine with a greater influence of Picapoll Blanc, an almost extinct grape that perfectly reflects this commitment from both parties to the environment.”
“The journey to this bottle has been hard: marked by severe drought, limited productivity, and resilient plants. It required extensive reflection and continuous improvement, but it was worth every effort. Picapoll Blanc and Picapoll Negre are ancestral varieties deeply rooted in our landscape, perfectly adapted to the local climate,” said Carles Muray, enologist for Oller del Mas.
Like the waves of the sea, Onades is a white wine that reflects an unparalleled strength and vitality. A combination that defends the expression of its conditions and the influence of the Mediterranean and its climatology. Its name, waves in Catalan, encompasses Paco Pérez’s passion for the sea and his commitment to restoring the balance of the oceans.
“Working with these grapes is a delight, simplifying our process. We’ve crafted this wine the way we like to work, with minimal intervention, using indigenous yeast from our vineyards and no oenological additives. A slight aging in wood adds complexity, and we’ve only lightly filtered the wine. In conclusion, we are thrilled and proud of the result,” adds Oller del Mas’ Muray.
The collaboration between the restaurant and winery captures the essence of the powerful dance between the sea and the land. The label pays homage to that primordial force, depicted in a dry stroke that leaves a deep imprint on the paper, reflecting the texture of a wave crashing against the shore. In 2011, Oller del Mas became the first winery in Catalonia to gain a carbon footprint certificate, registering only 0.89 kg of CO2 per bottle of Petit Bernat, making the winery the third-lowest emitting winery in the world when producing a bottle of wine.
