Corollary Wines Announces New Tasting Room Dedicated Exclusively to Sparkling Wines

Oregon Winery Celebrates Groundbreaking of New Tasting Room on 57-Acre Estate 

Portland, OR. (Dec. 14, 2023) – Corollary Wines, known for exclusively producing distinctive traditional method sparkling wines in Oregon’s Willamette Valley, has announced its new tasting room, slated to open in Oregon’s Eola-Amity Hills AVA in late spring 2024.

Corollary Wines purchased the 57-acre property in the Eola-Amity Hills in 2022 with plans to develop a privately-owned estate dedicated exclusively to sparkling wines, managed and developed under the guidance of permaculture and regenerative agriculture principles. The land, previously a timber property, had never been used for viticulture before Corollary founders Dan Diephouse and Jeanne Feldkamp prepared and planted the inaugural vines specifically for sparkling wine in the fall of this year. 

Corollary worked with Portland’s Waechter Architecture, known for transforming complex conditions and challenging sites into buildings of elemental beauty, to design its tasting room and visitor pavilion. The team was charged with prioritizing ecology and connection with the landscape while also creating a contemporary, timeless silhouette. The building is designed as a shade structure mostly open to the elements, appearing from a distance as a drop of Corollary Red in a sea of the green and gold property. 

The new tasting room’s exterior and unique butterfly roof will be clad in vibrant Corollary Red metal panels. From the entrance, the building’s silhouette appears as dynamic wings, recalling the intersecting triangles in the brand’s logo. The butterfly roof is also designed to collect rainwater to supply water for the building, irrigate the surrounding garden and landscaping, and mitigate runoff.

The tasting room will provide a range of interior and exterior spaces for curated winemaker tastings. Adaptive elements, such as movable stainless steel curtains for the outdoor patios, will help to balance connection with protection for the outdoor spaces regardless of whether the weather is sunny, windy, or rainy. The interior will be clad in locally sourced white oak paneling, a nod to the 25 acres of native Oregon white oak trees that will be preserved as oak savanna on the property. Other design elements will include a prominent hand blown glass light fixture emulating bubbles, a bathroom with floor-to-ceiling asymmetric lighted mirrors, and indoor and outdoor pixel-style furniture.

“We wanted to create a bold, inviting space for guests to experience our wines and discover first-hand why the Willamette Valley is the perfect place to make world-class sparkling,” says Jeanne Feldkamp. “Every aspect of the tasting room’s design is geared toward fostering connection with the land in a surprising and delightful way. We can’t wait to welcome folks to enjoy the views with us and learn about our passion for bubbles.” 

At the new estate, Corollary will focus on traditional champagne grape varieties including Pinot Noir, Chardonnay, Pinot Meunier, and Pinot Blanc. As one of a very small number of growers that plant exclusively for sparkling, Corollary will leverage the extensive knowledge Dan and Jeanne have gained over the last seven years to experiment with root stocks, clones, and row orientation as they work to find the best ways to farm for sparkling in the valley. 

“With our first 13 acres now planted, we’ve taken a huge step toward achieving our dream of creating an integrated, regenerative agricultural system designed around farming for sparkling wine,” says Dan Diephouse. “Now it’s a game of patience as we wait for the maturation of our vines and the eventual release of our first estate wines.”

Corollary currently produces about 2000 cases annually. They are committed to working with growers who follow sustainable farming practices. As an extension of this commitment, they recently purchased an expansive 57-acre property in the Eola-Amity Hills AVA that has been planted specifically for sparkling wines. Management of the property will be guided by regenerative agriculture principles. In addition, the company is currently constructing a tasting room, expected to open in late spring 2024.
