October 11th – In its constant quest for excellence, Billecart-Salmon experiments with new methods in order to offer ever more memorable and unique tasting experiences. Precise, original, bold, the Rendez-vous of Billecart-Salmon were born to epitomize a Champagne grape variety and an exceptional terroir, combined with the meticulous art of winemaking. Discover two new cuvées from the collection : N°4 and Numéro Cinq.
Rendez-vous N°4 highlights Chardonnay exclusively made of the 2015 vintage from Mesnil-sur-Oger, a historic terroir of Côte des Blancs classified as a Grand cru. This cuvée benefits from a long and meticulous ageing on lees and highlights a selective approach based on purity of the fruit and a balance of flavors. Its sensory development leans on distinguished aromatic floral notes (jasmine, fresh pineapple and buttery brioche) and a chalky and seductive imprint (Menton lemon, blood orange and hazelnut powder). Culinary pairings can include sea bass cooked in a salt crust with thyme or scallop yakitori.
Rendez-vous Numéro Cinq gives pride of place to five historic terroirs of Montagne de Reims, ideally facing south on chalk subsoils: Verzenay, Ambonnay, Aÿ, Mareuil-sur Aÿ and Verzy where Pinot Noir subtly expresses itself, revealing the terroir-based DNA of the cuvée. Infused with floral sensations (lime blossom and verbena), this delicate single-varietal evolves towards a remarkably full-bodied, elegant interpretation of creamy fruit (limoncello, crushed almonds and light tobacco). It will pair wonderfully with hay-roasted poultry or minced beef with fresh cilantro and spring onions.
