Monte Carbonare Soave Classico DOC a Piece of Soave Land in the Glass

September 27th 2023, Soave (Verona) – ITALY  At Suavia, a winery where the territory has always had the first place, when talking about Monte Carbonare Soave Classico Doc they define it as follows: “It is straightforward, genuine and with great character, just like having a piece of Soave land in the glass.”

Monte Carbonare Soave Classico DOC, is a wine with a very strong personality: forthright, truthful, with an edgy minerality. The vineyards of the Carbonare area, are rooted in a purely volcanic land with clay-textured soils and a dark colour, given by black basalt, reminding that of coal. They grow at an altitude of 280 meters extending over an area of 6 hectares with northern and eastern exposure. Here the Garganega vines, planted with the Veronese pergola system, reach an average age of about 60 years. Harvested strictly by hand, this wine matures for 12 months in contact with the fine lees in steel tanks, is filtered once through a membrane before bottling and then ages in the bottle for 6 months.

Made from 100% Garganega grapes, it has a bright straw yellow color. On the nose it is smoky and sulfurous, releasing hints of flint along with notes of citrus and wild flowers. On the palate it is creamy and elegant with extreme freshness and flavor and a dry and very persistent finish. Its perfect pairing is with all seafood dishes but it can also accompany savory white meats very well. Excellent with vegetable-based risottos, truffles and medium-aged cheeses.

Garganega is the most versatile variety, with a generous yield. Simple results can be obtained from its grapes, but at the same time the most noble and important expressions can be developed. It has a high adaptive capacity to every type of soil. It can be vinified in various ways and lends itself to aging. Its cluster is not excessively compact, which means that it is not easily subject to rot. On an organoleptic level it is complex and very fragrant.

Suavia is a certified organic winery, as stated by the logo on the labels. The conversion, officially completed in 2019, demonstrates tangible commitment to the environment through sustainable agronomic management. Organic farming, in a context like Suavia’s with very steep slopes, is not easy to implement and requires great commitment and determination.
