As the main grape variety of the prestigious Côte des Blancs, Chardonnay from the 2008 vintage benefited from a slow ripening process, allowing freshness and a beautiful aromatic concentration. For Louis Salmon 2008, grapes were sourced from the best parcels of Grands Crus: Cramant and Chouilly for finesse, Avize for strength of character and Mesnil-sur-Oger for structure and longevity. Chalk, the keystone of this renowned terroir, provides a unique typicity and an astonishing mineral purity to the wine. Partially matured in oak casks, Louis Salmon 2008 expresses great complexity and reflects a specific expertise in wine-making through the inimitable signature of the House’s vintage champagnes.
Louis Salmon 2008 is endowed with an elegant maturity, translated through complex notes of yellow fruit and citrus. Characterised by a creamy mouthfeel with refreshing balance and incredible length, this is a truly sophisticated wine worthy of the most beautiful of pairings: Corrèze veal sweetbread casserole or creamy risotto with shellfish.

ABOUT CHAMPAGNE BILLECART-SALMON
Billecart-Salmon was first and foremost the result of a union. A union between Nicolas François Billecart and Elisabeth Salmon who, in 1818 and just married, founded their own Champagne House in Mareuil-sur-Aÿ, a village near Epernay. At their side was Louis Salmon, Elisabeth’s brother, a passionate oenologist. Today, Mathieu Roland-Billecart, the 7th generation of the family, heads the House.
