A cuvée of 100% Pinot Noir that expresses the richness of the terroir and the purity of the wine.
15 February — Clos Saint-Hilaire originates from a single enclosed, contiguous one-hectare parcel of old vines planted with Pinot Noir in Mareuil-sur-Aÿ in 1964. Named after the patron saint of the village where the Family House was founded, this parcel is conducted with the utmost respect for the environment and for biodiversity.
Entirely vinified in oak casks, the new 2006 vintage displays incredible typicity and is destined to live on for future decades with strength and elegance. With its abundant and imposing texture, one finds a richness of flavours on the palate with hints of citrus fruit flesh and pears in syrup. Its beautiful aromatic complexity will pair wonderfully with fine dishes such as Wild Turbot or Halibut with Burmese coffee.
The packaging of the cuvée has been revamped: a new label made of cherry wood, sourced from sustainable forests, bestows a sense of authenticity and singularity. In essence, wood is distinguished by differences in grain and color, which makes each bottle unique, just like the personality of this rare vintage.

Billecart-Salmon was first and foremost the result of a union. A union between Nicolas François Billecart and Elisabeth Salmon who, in 1818 and just married, founded their own Champagne House in Mareuil-sur-Aÿ, a village near Epernay. At their side was Louis Salmon, Elisabeth’s brother, a passionate oenologist. Today, Mathieu Roland-Billecart, the 7th generation of the family, heads the House. Two centuries have passed since the creation of Billecart-Salmon champagnes, yet its motto remains unchanged: “Give priority to quality, strive for excellence”.
