Enartis Launches Easytech – Selection of Direct Addition Fermentation Products.

Windsor, CA (June 25, 2021) — Enartis is proud to announce the launch of a new selection of products – Easytech – that offers simpler preparation methods which make winery operations easier, as well as reduce resources needed to adequately prepare products, including equipment, energy, water and, most importantly, staff.

Easytech will include two yeasts and two inoculation nutrients for the 2021 harvest:

  • EnartisFerm WS and EnartisFerm Q ET (new)
  • Nutriferm Arom Plus and Nutriferm Ultra (new)

The two yeast strains included in the Easytech portfolio have been selected for their intrinsic characteristics, as well as for their production process, which makes them suitable for direct inoculation, without requiring rehydration to ensure optimal fermentation performance. 

The well known and loved EnartisFerm WS, isolated 30 years ago from a late harvest Zinfandel from Williams Selyem Winery in Sonoma, is known for its ability to completely ferment high °Brix grapes in low nutrient conditions. It contributes excellent complexity and structure enhancement with soft tannin extraction, while respecting varietal and terroir characters and boosting fruit and spice expression. 

For over 25 years, WS was only available in the concentrated liquid yeast form, as its unique characteristics made it challenging to produce in the active dry yeast form (ADY). After several years of research, Enartis’ yeast laboratory developed a new production process that successfully produced WS in the dry form. This optimized process also makes EnartisFerm WS able to be dry pitched, making cellar staff’s lives easier. WS is now certified Easytech, a certification that attests that each lot has been tested and certified for direct inoculation.

José Santos, President and CEO of Enartis USA stated, “In recent years, our customers have asked for dry pitch yeast. We had heard some anecdotal comments that some winemakers were successfully dry pitching EnartisFerm WS, our star yeast. We decided to further investigate this and confirmed that WS’ characteristics, combined with the special production process we developed allowing this strain to be available in the ADY form since 2014 (almost 25 years after being isolated and produced in the liquid form), also makes it suitable to be directly inoculated into must without the need for rehydration”. 

In addition to EnartisFerm WS, a new yeast strain, EnartisFerm Q ET (for Easytech), will be available in North America for the 2021 harvest. This new yeast is a multipurpose strain, respectful of varietal characteristics, a good fermenter over a wide temperature range, that is well suited for fermentation of quality white, red and rosé wines.

José Santos further added, “The staffing limitations brought to us by the COVID-19 pandemic, further justify the need for fermentation products that are easy to use. In addition to the two direct pitch yeast strains available, Enartis now offers two granulated yeast inoculation nutrients that are less powdery and safer to use, as well as easier to dissolve directly in must.

The Easytech selection, particularly the direct inoculation yeast, undergoes an additional strict quality control process that allows Enartis to certify the suitability of the product for the new preparation methods.
