Aperture carefully selects sites with lower average temperatures, mitigating the impact of rising global temperatures and ensuring that Cabernet Sauvignon and other varietals can thrive with optimal balance and expression in the decades ahead. By selecting clones and varietals that are better suited for their environment as vintages become warmer and dryer, Aperture’s vision will allow vineyards to grow older while building resilience to climate change, preserving and elevating the integrity of luxury winemaking.
Aperture is also leading the way in low-water viticulture through dry farming and deficit irrigation practices. By implementing innovative techniques, the winery reclaims 98% of the water from the winemaking process, captures rainwater in reservoirs, and significantly reduces water consumption—all while enhancing soil health, strengthening vine resilience, and fostering more sustainable ecosystems.
