The Languedoc region, specifically Limoux, provides the ideal terroir for French Bloom cuvées. The “oceanic terroir,” influenced by the Atlantic climate, preserves the grapes’ acidity and ensures exceptional balance. After numerous trials in alcohol removal and extensive research, this terroir became the obvious choice for French Bloom. It reveals all the richness and complexity required to craft exceptional alcohol-free sparkling wines. In this region, the oceanic climate promotes fresher wines, with slower grape maturation – an ideal condition for creating French Bloom’s L’Extra Brut. The limestone and clay-rich soil enhance complexity and freshness, giving the collection its vibrant minerality and tension.

The process of unveiling the wine lies at the heart of French Bloom’s winemaking philosophy: deconstructing the wine to recreate it from the vine, ensuring complexity in the final stage. Rodolphe Frerejean-Taittinger, CEO and head of research and development, draws upon decades of expertise in Champagne and Cognac. French Bloom’s revolutionary wine unveiling process focuses on quality even before the alcohol removal begins, redefining winemaking principles and expanding its horizons. Combining ancient vineyard wisdom with four years of dedicated research and development, the process involves advanced alcohol-removal techniques, including innovations in low-temperature vacuum distillation that better preserve the wine’s integrity. For L’Extra Brut, the journey begins with an early harvest in Limoux, where the grapes are picked at their peak to maintain natural acidity and freshness. Thirty percent of the wine is aged in oak barrels, adding structure and character to the juice. To craft L’Extra Brut, French Bloom created a base wine similar to Cognac and then distilled it three times through low-temperature vacuum distillation, never exceeding 32 degrees Celsius. The first distillation reduced the alcohol content from 14% to 3%, the second from 3% to 0.5%, and the final step achieved 0.0% alcohol.
