Wynn Las Vegas Debuts First-of-Its-Kind Luxury Wine Weekend in Partnership with Napa Valley’s Famed Opus One Winery

Wine Enthusiasts Can Enjoy Full Schedule of Events Through the All-Access ‘Collector’s Experience’ Package 

LAS VEGAS (March 9, 2023) – Wynn Las Vegas is partnering with Napa Valley’s acclaimed Opus One Winery for the ultimate weekend wine escape from Friday, April 28 – Sunday, April 30. Bringing the exclusive Opus One experience outside the boundaries of its estate for the first time, the weekend will offer in-depth master classes, intimate tasting room experiences, food and wine pairings from Wynn’s acclaimed chefs, and an “Opus One Under the Stars” outdoor, open-fired feast. Tickets will be available for purchase beginning Friday, March 10 at www.wynnlasvegas.com.

“Our goal when developing these events was to foster an atmosphere where those passionate about wine can connect in a fun and engaging environment,” said Brian Weitzman, executive director of wine for Wynn Las Vegas. “As an avid wine enthusiast myself, I’m excited to join our guests in exploring the Opus One library in new and unique ways at a caliber that only Wynn can deliver.”

Throughout the weekend, guests will never taste the same wine twice, with Opus One showcasing vintages dating back to 1982 in formats from 750mL to double magnum 3L bottles. Attendees will have the opportunity to sample up to 21 Opus One vintages, more than half of the vintages ever produced.

Tickets for select individual events will be available beginning at $500 per guest.  

A limited number of Collector’s Experience packages will be available for $15,000 for a single guest or $25,000 for couples, and include an all-access pass to the weekend’s complete programming, a two-night stay in a Wynn Tower Suite room, private concierge service, ground transportation to and from the airport, special welcome amenities, tax and gratuity and more.

The weekend itinerary includes:

Pop-Up Opus One Tasting Experience (Friday, April 28)

Inspired by the ambiance of the Opus One Tasting Room experience, this 60-minute tasting, guided by Opus One’s Ambassadors, will offer guests insight into the winery’s French and American origins, as well as the chance to learn about vineyard and winemaking practices. The small-group style tasting will take place on the patio of SW Steakhouse and will include a sampling of charcuterie and bites from Chef Mark LoRusso.

Improbable Pairings Tasting (Friday, April 28)

This intimate food and wine pairing class will highlight Japanese food as an unexpected cuisine to accompany Opus One wines. The sampling of three Opus One vintages will be paired with several signature dishes from Chef Min Kim of Mizumi.

Nose-to-Tail Dinner (Friday, April 28)

Only available to Collector’s Experience ticket holders, this elaborate, five-course menu of ‘whole cow’ cuts will be paired to four rare vintages of Opus One poured from large format 3L bottles. The menu, curated by James Beard Award recipient and Wynn’s VP of Culinary Operations, Chef Christopher Lee, will feature an A-5 Kobe Beef tartare, beef cheek cappelletti, slow poached beef tenderloin and a dry-aged NY Strip trio.

An Opus One Awakening (Friday, April 28)

Curated especially for Opus One wine weekend guests, Wynn invites attendees to its new show, Awakening, with a special VIP viewing package that includes elite circle seating and small bites or desserts paired with Opus One or Champagne.

The Art of the Table (Saturday, April 29)

Opus One will bring its immersive “Art of the Table” experience to Delilah at Wynn for a special luncheon featuring four vintages of Opus One alongside seasonally inspired cuisine from Delilah’s executive chef, Joshua Smith. This 90-minute event stays true to Opus One’s “Art of the Table” philosophy that fine wine and exceptional food are best enjoyed while surrounded by art and beauty, which can be found in every corner of Delilah. 

Opus One Master Class (Saturday, April 29)

This master class will offer guests the rare opportunity to experience the journey of Opus One through the eyes and palate of its own renowned Winemaker, Michael Silacci. Four unique vintages, poured from magnum bottles, will be paired to dishes curated by Chef David Middleton, executive chef of Lakeside.

Opus One Happy Hour at Aft Cocktail Deck (Saturday, April 29)

This private happy hour event will take place at Aft Cocktail Deck, Wynn’s newest cocktail destination set on the picturesque Lake of Dreams. Guests will enjoy two vintages of Opus One wine paired to an array of small bites.

Opus One Under the Stars (Saturday, April 29)

Hosted by Chef Christopher Lee and Chef Sarah Thompson, executive chef of Casa Playa, this al fresco feast will be set amongst the resort’s fairway greens. Guests will indulge in three different vintages of Opus One while enjoying a unique array of open-fired dishes inspired by the open-fire cooking of famed Argentinian chef Francis Mallmann.

ABOUT CHEF MIN KIM

Trained in traditional Japanese cuisine, Chef Min Kim is the executive chef of Mizumi at Wynn Las Vegas. Prior to taking the helm in Las Vegas, Kim led the Mizumi team at Wynn Palace in Cotai where his authentic and expansive menu gained popularity with guests. Hailing from Seoul, Kim’s education and career have taken him around the world with stops in Sydney, Tokyo and Macau before finally arriving in Las Vegas. The artistry and authentic Japanese flavors Kim weaves into each dish are second to none.

ABOUT CHEF CHRISTOPHER LEE

Over his twenty years in the industry, Lee has received acclaim in his managerial positions, as well as in the kitchen. He is the recipient of the 2005 James Beard Award for “Rising Star Chef of the Year,” and received a James Beard Nomination for “Best Chef Mid-Atlantic” in 2006. That same year, Lee was also named as a “Best New Chef” by Food& Wine. Additionally, Lee has helmed two Michelin-starred restaurants – Gilt (New York, 1 Michelin Star in 2007; 2 Michelin Stars in 2008) and Aureole (New York, 1 Michelin Star in 2009).

ABOUT CHEF MARK LORUSSO

Chef Mark LoRusso is the executive chef of Wynn Las Vegas’ award-winning SW Steakhouse, where he offers guests high quality seasonal ingredients and the finest cuts of prime, Wagyu and certified Kobe beef. LoRusso joined Wynn Las Vegas in 2005 as part of the resort’s opening team, bringing knowledge and expertise from his time as the executive chef of Michael Mina’s Aqua. Originally from the east coast, LoRusso attended the Culinary Institute of America in Hyde Park, N.Y.

ABOUT CHEF DAVID MIDDLETON

With nearly two decades of fine dining experience in Las Vegas, Chef David Middleton’s passion and knowledge of elevated cuisine has led him to his current role as Executive Chef of Lakeside at Wynn Las Vegas. A Las Vegas native with training in traditional French cuisine, Chef Joshua Smith has helmed the kitchen at Delilah at Wynn Las Vegas since its opening. Smith’s extensive experience has resulted in a menu of elevated American supper club favorites with an inventive flair. Smith honed his skills with previous experience as executive chef of Bardot Brasserie, as well as stints at Michael Mina’s Seablue, Estiatorio Milos and Anisette Brasserie.

ABOUT CHEF SARAH THOMPSON

Chef Sarah Thompson has honed her skills in some of New York City’s most notable restaurants including Michelin-starred Marea, Wylie Dufrense’s Alder, and with Andrew Carmellini’s NoHo Hospitality Group. In 2015, renowned chef Daniela Soto-Innes recruited Thompson for the Cosme team. There, with Soto-Innes’ leadership and tutelage, Thompson worked her way up to executive sous chef. In 2020, Thompson joined Wynn Las Vegas as an executive chef, where she now helms the kitchen at Casa Playa, the resort’s coastal Mexican eatery. Thompson’s menu features authentic Mexican flavors with dishes ranging from fresh seafood and tacos to delicious large-format feasts.
