Chinatown’s Favorite Szechuan Dining Destination Launches “Spicy Flights” Menu to Heat Up San Francisco Summer and Support the CAL FIRE Benevolent Foundation

SAN FRANCISCO (August 8, 2022) – Z & Y Restaurant, the premier Szechuan dining destination located in the heart of San Francisco’s Chinatown, is pleased to announce a new wine pairing menu in collaboration with Sonoma-based wine and spirits négociant, 3 Badge Beverage Corporation. The “Spicy Flights” menu will be available for a limited time only, with a portion of the proceeds benefitting CAL FIRE Benevolent Foundation, an organization providing funds for California Firefighters and their families.

“We are so close to many prestigious wine regions, it felt natural to pair our authentic dishes with local wines to enhance the dining experience,” said Executive Chef Lijun Han. “I want to educate people about Szechuan cuisine and it’s bold flavors, especially pungency and spiciness, due to the use of garlic, chili peppers and Szechuan pepper, which pair surprisingly well with many different wines and we are excited to share this with our guests with this special menu.”

The “Spicy Flights” pairing menu features several deliciously authentic Szechuan dishes, prepared by Chef Han, paired with various wines from the 3 Badge Enology portfolio, including select bottles from: GuinigiTree FortGehricke, and Cedar & Salmon. All the wines will be available to purchase by the glass or bottle. Select menu pairings include: Crispy Garlic Prawns or Sliced Pork with Spicy Garlic Sauce paired with Gehricke Pinot Noir, Gehricke Los Carneros Sonoma Rosé, Tree Fort Chardonnay or Gehricke Chardonnay; Chicken with Explosive Chili Pepper paired with Gehricke Pinot Noir, Gehricke Los Carneros Sonoma Rosé, or Cedar & Salmon Pinot Gris; and Tea Smoked Duck paired with any of the Pinot Noirs or the Cedar & Salmon Cabernet Sauvignon.

“We are so excited to partner with Z & Y,” said August Sebastiani, president of 3 Badge Beverage Corporation.  “Our unique portfolio of wines provides options for unusual and surprising pairings, none more exciting than the unique Szechuan flavors on this sensational menu from Z & Y. Our company, 3 Badge, is named after my grandfather’s volunteer firefighting service badges, so we’re particularly excited to help support CAL FIRE Benevolent Fund, especially during this time of year.”

A fourth-generation member of one of California’s oldest wine families, August Sebastiani is the president of 3 Badge Beverage Corporation, a wine and spirits négociant company based in Sonoma, California. After growing up in Sonoma, August went on to earn a degree in Political Science from Santa Clara University. Shortly thereafter, he returned to his hometown to join his father and brother at Don Sebastiani & Sons, where in 2005 he founded a division that would become 3 Badge Beverage Corporation including an Enology, Mixology and Zymology portfolio.

Professionally trained, Han is an award-winning chef with decades of experience cooking authentic Szechuan cuisine. He attended a top culinary school in Beijing where he specialized in Szechuan food and culture, before emigrating to the U.S. in 2000 to serve as executive chef at the Chinese Consulate in San Francisco. At Z & Y Restaurant, Chef Han strives to offer authentic dishes with fresh, healthy ingredients, utilizing Chongqing and Chengdu styles of Szechuan cooking. Chongqing style is the well-known bold flavors with liberal use of the chili peppers and oil. Chengdu style has a more subtle taste with less chili peppers. Both styles are featured on the Spicy Flights menu to welcome guests that enjoy spice-centric food as well as guests that prefer mild flavors but want to experience Szechuan cuisine.

Z & Y Restaurant is an award-winning dining destination, first receiving the coveted Bib Gourmand Michelin ranking in 2012 and retaining that status every year since. The restaurant is located at 655 Jackson Street (between Grant Ave. and Kearny St.) and is open Wednesday through Monday from 11:30 a.m. to 3 p.m., and 4:30 to 9 p.m. The “Spicy Flights” menu will be offered for lunch and dinner service through the end of September.
