Silver Trident Offers Estate Olive Oil

Italian & Spanish cultivars from winery’s Napa Valley estate vineyard

Yountville, Napa Valley, February 24 — Silver Trident Winery has just released its first olive oil. Apollo’s Folly Extra Virgin Olive Oil is a very small production oil made primarily from Italian and Spanish cultivars grown at the winery’s estate vineyard in St. Helena. Presented in a 500 ml bottle, the label is a rendering of a graceful olive tree being visited by embossed wildlife including a squirrel, fox, quail, rabbit and hummingbird.

Apollo’s Folly Extra Virgin Olive Oil is available for $45.00 at the winery’s Tasting Home in Yountville and on line.

“We wanted the label to depict the charm of the olive grove which adjoins our estate vineyard and the forest creatures who emerged during Covid,” explains proprietor Bob Binder. The name refers to the Greek god Apollo’s “folly” of falling in love with a mortal.

The cultivars are Pendolino, Frantoio and Coratina (Italian) and Gordal and Manzanillo (Spanish). The olives are hand-harvested and pressed on the same day to insure the freshest and most complex possible flavors. “This oil was made from olives harvested in November, 2021. This is one of very few all-Napa Valley small-estate olive oils available,” Binder adds. The Italian cultivars provide an elegantly spicy quality and the Spanish olives contribute tropical and stone fruit notes. The blend includes olives from several other small family-owned olive orchards in the area.

The extra virgin olive oil shares the same name as the winery’s Rosé of Pinot Noir, honoring the principle of following your passion no matter where it may lead.

The olives were harvested and oil produced under the supervision of Maria Milagros Castro of Milagros Olive Advisor. Maria Milagros Castro is a very respected agronomist specializing in olives. Her journey to all things olive oil dates back to when she lived in Mexico, where her family produced table olives and olive oil in central Mexico. She came to the U.S. to further her work with olive oil, and, to that end, studied olive culture in both Italy and Spain. Milagros is a member of the esteemed California Olive Oil Council Taste Panel, which requires its members to have an extraordinarily precise ability to evaluate olive oil quality. Silver Trident also offers two other small production items. The Playing With Fire Napa Valley Candle, which sells for $52.00, is a mix of fig, thyme, barrel smoke and petrichor fragrances and is made from organic soy and coconut.

The Benevolent Dictator Coffee was sourced expressly for the winery and is a whole-bean medium roast coffee from beans responsibly farmed in Ethiopia, Oaxaca and Guatemala. The 12-ounce bag sells for $20.00.

Silver Trident Winery is a small production winery whose Yountville Tasting Home is an elegant showroom with décor and furnishings by the Ralph Lauren Home Collection. It is located at 6495 Washington Street, Yountville, CA 94599 and is open seven days a week 11ish – 6ish.
