The Italian cucina names Fidelma Cunniffe as Beverage Director

The Florentine, Chicago’s destination for modern Italian cuisine, is thrilled to announce the restaurant’s new beverage director, Fidelma Cunniffe. By way of Dublin, Ireland, Cunniffe brings extensive cocktail, wine and beer experience to The Florentine’s beverage program. With a focus on simple and complementary flavor combinations, Cunniffe’s expertise brings the perfect addition to Executive Chef Zachary Walrath’s Italian recipes.

“We are excited for Cunniffe to put her mark on The Florentine’s well-rounded beverage program,” says Dustin Heilmann, General Manager of The Florentine. “With her classic outlook on flavors and ingredients and her passion for blending the old with the new, she will be able to create a perfectly curated experience for our guests.”

No stranger to the restaurant scene, Cunniffe has worked at an array of renowned restaurants in Chicago, including Lady Gregory’s and Wilde, having curated cocktail recipes, as well as handled wine purchasing and craft beer selections. As a self-proclaimed wine geek, Cunniffe is excited to delve into the extensive wine program at The Florentine, giving her the opportunity to explore new labels and provide a one-of-a-kind experience for diners. With Cunniffe’s thirst for knowledge as the driving force, guests can expect even more from The Florentine’s comprehensive beverage program.
