Randox 6x3Randox Food Diagnostics has launched a new analysis kit to detect the levels of Tartaric Acid in wine. This kit has been developed to provide superior levels of accuracy and will aid in the assessment of wine quality worldwide.

Unlike most other fruit, grapes contain high levels of Tartaric Acid which gives wine its distinct flavour. Tartaric Acid is a naturally occurring acid found within the flesh of grapes and is one of the most prevalent organic acids, along with L-Malic acid, present in wine. The concentration which is present within the wine has a key role in its acidity and has a profound effect on characteristics such as odour, colour and flavour.

This acid also plays an important role in preservation, as the Tartaric Acid lowers the pH which denatures undesirable bacteria within the wine.  The determination of tartaric acid is also of interest in stability studies, since it forms complexes with potassium and calcium and the resulting precipitate causes undesirable deposits in the bottle. Tartaric deficiency can lead to multiple problems with the taste and colour of a wine.
