Mallory Uran joins Calistoga winery

Mallory UranCalistoga, Napa Valley, May 2015—-Mallory Uran is joining Phifer Pavitt Winery as Director of Hospitality and Sales, according to proprietors Suzanne Phifer Pavitt and Shane Pavitt. “We’re delighted to have someone of Mallory’s caliber join our burgeoning winery,” they said, in making the announcement.

A graduate of Sonoma State University, Mallory is a fifth generation Carneros native. She began her career working with grower and vintner Francis Mahoney. Mallory has developed her hospitality career over the last decade, most recently working for the Plump Jack Group for ten years.

Phifer Pavitt’s current releases are the 2011 Cabernet Sauvignon ($80) and the 2014 Sauvignon Blanc ($30). Wines are available at the winery or online, www.phiferpavittwine.com. The winery, located at 4660 Silverado Trail in Calistoga, is open by appointment by phoning 707/942-4787.

The Cabernet Sauvignon is sourced from Temple Family Vineyards’ organic vineyard in Pope Valley. The Sauvignon Blanc is made from sustainably grown grapes at Juliana Vineyards in Pope Valley.

Phifer Pavitt Wines launched with the release of the 2005 DATE NIGHT Cabernet Sauvignon. The DATE NIGHT wines’ label features a ‘retro’ rendition of a cowgirl, a vintage image created by a member of the Pavitt family. “We make serious wines, which are strong and still stylish,” explains proprietor Suzanne Phifer Pavitt, “and this vintage cowgirl expresses that spirit,” she adds.

Phifer Pavitt Wines is the realization of a dream of Suzanne Phifer Pavitt and Shane Pavitt, who over the course of several years of ‘date nights,’ hatched the idea of their own Napa Valley winery. The winery is housed in a historic “Napa Valley vernacular” barn, with a board-and-batten façade and a metal roof, nestled into a scenic spot looking out over views of Napa Valley. The barn-winery was repurposed with touches including recycled-blue-jeans as insulation and rusty hay baling wire from the property fashioned into chandeliers and light fixtures. The upstairs of the barn-winery includes repurposed Wyoming snow fencing planks, a black walnut tasting counter suspended from the ceiling and hay bale seating. Downstairs the interior walls have a chalkboard finish decorated with sketches of the cowgirl motif.

The winery’s club, The Verona Society, locks in a customer’s allocation (the winery’s wines sell out each year). “Our club is called The Verona Society because, as a winery founded on the importance of romance, how could we not honor the home of Romeo and Juliet, where even today people tuck love letters into the crevices of Verona’s stone walls?” the Pavitts explain. Verona Society members buy a case of the winery’s wine each year and this entitles them to several benefits, including special events at the winery, pre-release purchasing and VIP winery visits.
